Super Fast Shrimp Dish/Instant Coffee Keto Style

Doesn’t that look yummy?  I whipped this one up in 10 minutes but probably would have been quicker if I wasn’t “creating” something to keep my hands out of the cereal box. I will post my successful lab experiment at the end of this post.


Instant Coffee Keto Style! So much energy!

I was super busy at work today, so I didn’t eat lunch. I didn’t miss eating because I had keto coffee this morning to tide me over until lunch (that I didn’t/forgot to eat).

Listed below are my keto coffee ingredients.

  • Instant Community Coffee (Instant coffee because I don’t have a coffee pot in my office and I didn’t want to walk over to the next building. This coffee is very very tasty, so I’m happy.)

  • KetoLogic Keto Coffee Creamer with MCT Oil Powder, French Vanilla (This is a bit pricey online, but I found it for 19.99 at Target. There is a cheaper way, it is just powdered coconut oil with flavoring. I’ve added the link to Amazon if you want to buy it.)

  • Truvia (Once again got on sale.  I like this sweetener because you don’t need much to sweeten your coffee and it is supposedly better than the other ones out there.)

Get your coffee cup, add hot water, add instant coffee, stir.

Add coffee creamer, stir, stir, stir to get the lumps out. Add sweetener. Drink up.

The coconut oil in the coffee keeps you full and give you energy.  It wakes you up. I sometimes add butter (ghee or butter, NOT MARGARINE)  you have to use a blender or hand blender to make sure it is mixed in well. If you don’t, you will have a butter slick in your mouth, ick!

Here is the alternate way I make this coffee:

Same as above but instead of using the keto coffee creamer I use Quest Nutrition Coconut Oil Powder, 20 Ounce (I’ve added the link to Amazon if you want to purchase this too.)  I use powdered coconut oil as my creamer and add Truvia.  If you need flavor other than coffee, look into the sugar-free syrups.

I Got the Munchies, Need Something FAST!

The worst time of the day for me is 5 p.m. until bedtime.  I am unwinding from work and traffic, so the first thing I want to do is turn on the TV and grub.  I’m a grazer (MOOOOO!), if I’m not careful, I will graze through a bag of chips, a package of cookies, a pint of ice cream, etc … not a carrot or a steak.

I know what I am capable of since I have been on a forever diet for 39 years, so I asked my Dad to pick up some frozen Gulf shrimp from Sam’s Club.  The ones I wanted had the tail on, but he bought the peeled and deveined uncooked shrimp. I’m glad he did! Panicking because the dry cereal snack/dinner (Lucky Charms, my kryptonite)  was quickly becoming a reality I opened the freezer and saw the shrimp. Here is what I did:


  • Frozen shrimp Uncooked Frozen Shrimp, Cleaned and Deveined, 41-60? ( I will check the count to make sure but they look like medium shrimp)
  • Garlic Powder
  • Powdered Crab Boil (BECAUSE…NEW ORLEANS IT’S IN MY SPICE CABINET! But you can use Old Bay if you want!)
  • Parsley
  • Lemon Juice (I had the concentrated lemon juice fake lemon bottle. Add lemon juice on top the frozen shrimp orafter it is cooked)
  • 2 tablespoons or so of butter (sliced and put on top of the shrimp)

Cover. Put in microwave for 5 minutes on high. Let it sit for 1 or 2 minutes. Put in a bowl, add some parmesan cheese if you want. Tastes yummy.

I didn’t add any liquids because the frozen shrimp will release its water while it is cooking. You may have to adjust seasonings and microwave times to suit you.  I used Crab Boil because that is what caught my eye. I will try lemon pepper flavor or even jerk seasoning next time. Here is a picture of the finished product again :

The broth is delicious too.  I didn’t need rice, noodles, or bread.  I ate this like a soup. The bowl is in my Weight Watchers 1 cup bowl and I used it because it is pretty no other reason.

I am full, and crisis averted. I’m full as a tick and didn’t graze away at sugar and processed foods.
