Having a flipping day here!  Doctors appointments, possible food poisoning….EVERYONE HAS A GODDAMN OPINION!

Need a Motrin and a antidepressant…for real!

Slimming Soups!

My Mom and Dad purchased some leeks.  they were saying that this is what French women eat whenevr they pick up weight.  They are probably gonna try to make this recipe so I figured I will post it so it will be easy for them to find. 🙂

This is from the book “French Women Don’t Get Fat,” by Mireille Guiliano. It’s made to be a booster for your elimation diet or a meal supplement. The juice is to be drunk every 2 to 3 hours, 1 cup at a time. For meals, or whenever hungry, have some of the leeks themselves, 1/2 cup at a time.

Magical Leek Soup

  • 2 Lbs leeks
  • 8 Cups water

Step 1:

Clean the leeks and rinse well to get rid of sand and soil. Cut off the ends of the dark green parts, leaving all the white parts plus a suggestion of pale green. (Reserve the extra greens for soup stock.).

Step 2:

Put the leeks in a large pot and cover with water. Bring to a boil, reduce the heat, and simmer uncovered for 20 to 30 minutes.

Step 3:

Pour off the liquid and reserve. Place the leeks in a bowl to be eaten separately, drizzled with a little olive oil and salt and pepper.

This is the original recipe for the “cabbage soup diet” that came out in the mid-1990’s. The diet calls for eating unlimted quanitities of this veggie-filled dish, along with other select foods, and watch the pounds slip away. But you don’t need to be a weight-loss plan to enjoy this hearty soup.

Cabbage Soup

  • 1 Head cabbage, chopped
  • 6 Onions, sliced or chopped
  • 2 Green bell peppers, chopped
  • 1 Bunch celery, chopped
  • 1 Bunch shallots or 1 bunch green onion, sliced
  • 2 Chicken bouillon cubes
  • 1 Envelope onion soup
  • 48 ounces V8 vegetable juice
  • 2 28 Oz. cans chopped tomatoes
  • 1 Lemon, juice of
  • 6 Crushed garlic cloves
  • Pepper to taste

Step 1

Place all in large stock pot and bring to a boil. Simmer for 1 hour. Serve.

Kale is a polarizing green. For some it denotes healthy lifestyles and for others it screams diet food. But this spicy winter soup will make a believer out of the skeptics. It’s a hearty tomato soup for a cold day that secretly also doubles as a healthy meal alternative.

Kale Tomato Soup with Chickpeas and Cumin

  •  3 Tablespoon ginger, minced

  • 1/4 Cup olive oil
  • 2 Shallots, diced
  • 1 Zucchini, diced
  • 2 Cup water
  • 1 28-ounce can whole peeled tomatoes
  • 1 Bunch curly kale, stalks trimmed
  • 2 Tomatoes, diced
  • 1 1/2 Ounce canned chickpeas, preferably low sodium
  • 2 Tablespoon ground cumin
  • 2 Tablespoon chili powder

Step 1:

Combine the ginger, olive oil, shallots, and zucchini in a pot. Sauté the ingredients together for 5 minutes.

Step 2:

Add the water, can of tomatoes, ¾ of the bunch of kale, 1 tomato, can of chickpeas, cumin and chilli powder. Bring to a boil and then simmer for 20 minutes.

Step 3:

Using an immersion blender (or transfering the soup to a blender in batches), mix the soup until fully blended.

Step 4:

Mince the final ¼ of the kale and put into the pot with the second tomato. Simmer for an additional 5 minutes and then serve hot.

The blended portion of the soup can be made a day in advance and then reheated.

…on something else. My lack of appetite will be seen as a blessing. By the time it comes back I am hoping to fit into some of my “cute” clothes again!

This is the place that I have secured in Juneau…a deal of a lifetime! This has made me even more excited to get there. This is one of the perks of my position…I know how to find what I need to live…efficiently! 🙂

BECAUSE I own The Skittle (2008 Saturn Astra FRONT WHEEL DRIVE…light as heck)

I may have a little trouble going up the hill in the winter time. Guess that is forcing my hand at getting something that is 4WD.

I figured I would have to have a truck in my life…

…I have none.

Where has it gone?  I have food sitting in front of me and I have no desire to eat.  When I do put it in my mouth it tastes funny.

My nerves are getting to me.  Once again I am letting things get into my head and affect my decisions.  I have to remember that I will not make popular decisions for all persons in my life.

I’m still trying to live for everyone else but me.

Well…at least I am getting in my water.  I am loving the ICEE Zero water enhancer …tastes just like blue raspberry icee…a silver lining in the dark clouds that I have allowed to gather over my head.

My Low Carb BK Breakfast…Plus…ICEES!

A breakfast for low carbing champions. 2 eggs, a slice of cheese, two slices of bacon, and two hamburger patties (I found the sausage patties had too much sugar)…Grand total $4.80. Not bad considering how much I would be spending on a regular meal from BK…full of carbs too!

I LOVE the fact that so many companies are going the Mio route. I LOVE ICEES! I grew up with them as a kid. NOW I can make the Cherry and the Blue Raspberry (SUGAR FREE) anytime I feel like it. I also noticed that Hawaiian Punch is also doing the same thing. I am so glad there are other options now…Crystal Light and Kool Aid are okay…but now we have Hawaiian Punch and ICEES…YAY! I found this at Walmart.

This little breakfast will probably hold me until dinner.  There is a benefit to eating this way…loss of weight in the middle and lack of appetite.

I can do that all day.

Oopsie Bacon Cheeseburgers/ Macaroni and Cheese

Dinner! Except for my low carb controlled Mac and Cheese (that is for tomorrow)…very filling. I. DID. NOT. MISS. THE. BREAD.  Don’t let the look of the Oopsie Rolls scare you…you cannot tell the difference and it is easier to eat that wrapped in lettuce.  This is a fully dressed burger…and the “bread” I used has <1g carbs. I will take that!

Biggie and Friends have a place to go!  A local pet store (NOT Petsmart…you would think they would) is willing to take the critters.  🙂

I was seriously upset.  That is the bad thing about moving to another state…you really cannot keep your fish.  I will be able to keep my fish tank.  I will definitely get more Black Moors to honor Biggie and Tupac…I will miss their big eyes very much.

Fishie, Fishie, Fishie!

I was checking out my favorite site Mystic Medusa and look what I found:

“For The Water Sign That Has Everything…”

I love fish!  That would be the coolest thing to have in my bathroom.  I am a water sign afterall…

I am looking at leaving for Alaska at the end of this month or the beginning of JUly.  I have a kick butt 15 gallon aquarium and a problem.  I have my Fishies…Black Moors, Fantails, Multicolored, and just Goldfish…and I have had them for almost two years.  I have grown attached to the little critters and just cannot bear to flush them.  I cannot find anyone that will take the fishies and it is bothering the heck outta me.

Does anyone know if a pet store would take the fish?  Flushing them is CRUEL…especially if they have personality like mine does.

🙁  How could anyone flush a face like that?? 🙁

Gonna call all the pet stores in the area to see who will take my lovelies.
