As promised….Coconut-Lime Stewed Chicken!

This is my lunch. It tastes better a few days later with all the flavors soaking in. I don’t mind this diet at all 🙂

I usually don’t want any part of dark meat.  The closest I would come to eating a leg is a drummette.  This recipe has converted me to the Dark Side. 🙂 There is no dairy in this dish only coconut milk (allowed on Whole30) chicken  broth and veggies…so rich!  I’m happy with the results.

I am looking for a way to eat a Sonoran Hotdog with pico de gallo and avocado mayonaisse.  I am craving that so much…but so far I haven’t found a way to make it Paleo Friendly. 🙁
