Fruit Cake!! Literally… :)

This is the second time I am seeing this “cake”.  It looks delicious and I am sure you can play around with the fruits that you use.  I am thinking this is a Paleo-Friendly “cake”. It looks Nommy and I have always said FRUITS and SALADS do not make you fat…it is what is put on top of it.  I would rather have “nature’s candy” ….not the bad for you processed kind. 🙂

This is definitely CORE friendly and Whole30 friendly (I think…gonna check to make sure)

Fresh Fruit Cake made entirely of fresh fruit

Freshfruitcake1 watermelon, seedless, medium-sized

1 pineapple, peeled and chopped (or sliced)

1 quart strawberry, whole

5 kiwi, peeled and sliced

Directions:

1. Lay watermelon on its side. With a large, non-serrated, sharp butcher knife, cut both ends off to form straight edges. Turn watermelon so that it is sitting flat-sides up and down. Carefully trim the rind off, so it resembles the smooth, straight curve of a round cake.

2. Arrange pineapple, strawberries and kiwi however you wish atop the cake and around the bottom. You may use tooth picks to put fruit into the watermelon if need be. If it is being prepared ahead of time, leave the tops on the strawberries to preserve their freshness.

3. Cover and refrigerate until ready to serve. Serve with fresh whipped cream, sherbet, or yogurt. Enjoy!~
