Results- Low Carb Taco Bake

This is from following the recipe exactly. Induction friendly.  It was surprisingly easy to make,  but I found it a little salty for my taste.  I added shredded lettuce cabbage (you can use lettuce…but once you use shreeded cabbage on tacos in place of lettuce you win’t go back!)  sour cream, and pico de gallo on top. The white stuff is Queso Fresco (crumbly cheese…very good and now I can’t eat anything without it)  Very light, yet filling at the same time. 🙂  I can’t believe this is low carb.  The crust holds it together really well.  I can do this again.  🙂  As far as the toppings are concerned…it really depends on how many more carbs you want to add to the recipe.  Just the recipe is 3.7 carbs per serving.  The 9X13 baking dish yields 8 servings.

Off to watch Apartment 143 on Netflix…the daughter in the movie reminds me of the teenage angst that I experienced while my daughter lived with me. 🙂
