Before Pictures…

…why do they tend to be the worst pictures that are ever taken of an individual??  That BEFORE picture that I took was about two months ago…at a bad angle…my hair was all jacked up…and can we say BLOAT?? I DO NOT look like that now.  It is so NOT DIVA that I am about to remove it.  Motivation?? Well, you can say I have that now.  Vanity is a sin and I have to say…I am sinning big time.  🙂  I am making progress though, my Spring/Summer clothes are KINDA fitting me.  I believe another 10 pounds and I will be back to my fighting/sexy weight.  Don’t get it twisted…I’m SEXY now…I just want a little less SEXY on me.

Going to ponder a new “before” picture, get my thoughts together about a LIFE post I am considering,  and get a recipe up for this refreshing cranberry drink I am sipping on.

That picture? Just terrible! Not an accurate depiction of me at all.  Definitely having a non photogenic moment!


Peppers!! Now that is GOOD!

OM Freaking NOM! I love stuffed peppers! Here is a simple yet tasty one posted by On My Way to Health. You can also add shrimp, crabmeat, ham, or all to give the peppers a new flavor. IF you add HAM…salt should be used sparingly. 🙂 I’m making this tonight!!


I’m awake again and HUNGRY!  Not for food…the drive and the commitment is back. Thank you God.  🙂

I guess looking at the newest before picture I posted and going through my blog…seeing where I came from.  That did it!  Also…a coworker of mine has lost 85 pounds and she now weighs less than I do. Oh hell no!  As happy as I am for her success…the competitive nature in me said WTF?? Get in there and kick ass Girl. 🙂 So I am…the workout Diva is back. Feels good!

I’m not hungry because of the evening workout ( a benefit) and that doesn’t matter since I will stop eating by 7PM.

Results- Low Carb Taco Bake



This is from following the recipe exactly. Induction friendly.  It was surprisingly easy to make,  but I found it a little salty for my taste.  I added shredded lettuce cabbage (you can use lettuce…but once you use shreeded cabbage on tacos in place of lettuce you win’t go back!)  sour cream, and pico de gallo on top. The white stuff is Queso Fresco (crumbly cheese…very good and now I can’t eat anything without it)  Very light, yet filling at the same time. 🙂  I can’t believe this is low carb.  The crust holds it together really well.  I can do this again.  🙂  As far as the toppings are concerned…it really depends on how many more carbs you want to add to the recipe.  Just the recipe is 3.7 carbs per serving.  The 9X13 baking dish yields 8 servings.

Off to watch Apartment 143 on Netflix…the daughter in the movie reminds me of the teenage angst that I experienced while my daughter lived with me. 🙂

Scary?? Really??

I think NOT!


This is the pictures of the Before and After of Danni from the Biggest Loser.  She looks amazing and healthy to me…NOT scary.  I see lean mass….muscles…confidence…health.   This is the inspiration I am taking.  IF she can do it…then so can I.  Yep…let’s look at SCARY…

2013-02-05_10.20.42[3]  THAT IS SCARY!!  That was taken almost two months ago.  I look different now, but I just needed to clarify SCARY (pre-diabetic, obese, high blood pressure, depression…I’M SHAMED…THAT is the reason I am down 15 pounds now)  to HEALTHY…rotaterdanni_allen(glowing, lean,muscular, healthy).  The only thing that is SCARY about Danni to some people is the hard work that it took to get to where she is now.  Scary my ass…I thinkshe has shamed me to work harder because I KNOW it is possible to achieve whatever goal you set for yourself.

So…disgusting ass worse picture I EVER took is on this blog.  Why does one always look like pure shit when they take a before picture.  My hair was even being stupid.  Ack!

I will be taking  picture every week just to show progress.  I am also going to stick to my workout plans.  If this young lady could commit herself to doing 4 hours of exercise 6 days a week…I think I can manage an hour.  Just need to start.  Need my body back…it’s springtime.  Time to look all pastel and fit!

First Day Of Spring…

…no Zombie Apocalypse!  I guess that means I can move forward with exercise. I’m on  never-ending quest to find my abs! So…back again saying I’m starting!


This time I mean it.  I am actually losing weight now.  I have gotten a new workout to add to the massive library that I own now.  I am going to do Les Mills Pump along with probably Taebo as cardio.  Spring is here and it is time ti get that booty high and tight!  Squat people…squat! Best exercise for your butt.

So…following what worked for me before.  Les Mills is 3 phases.  I am starting Phase 1 today.  Each day I do a workout and I eat clean I will be entering in some kind of thought that happens to cross my mind.  Fun!

Still debating if I am going to post the before shots I took of myself yet.  This blog is attached to my Facebook.  I don’t think I am ready for all the Facebook Friends to see me with a bad shape.  I will consider…

Low Carb Taco Bake!!

I am still on a Mexican kick so I will be making this recipe tonight.  It serves 8 and at 3.7 carbs per serving it is also Induction Friendly (for those on Atkins).  Once I make it I will be adding a picture of the finished product.




Low Carb Taco Bake   tacobake

  • Prep Time: 25 mins
  • Total Time: 1 hrs 15 mins
  • Servings: 8


“Serve with additional toppings like shredded lettuce, jalapenos, guacamole, ripe olives, sour cream or salsa.”




    • 1 lb ground beef
    • 3 teaspoons taco seasoning
    • 1/4 cup tomato sauce
    • 4 ounces chopped green chilies
    • 8 ounces cheddar cheese, shredded


  1. For the crust, beat the cream cheese and eggs until smooth.
  2. Add the cream and seasoning.
  3. Grease a 9″x13″ baking dish; spread the cheese over the bottom.
  4. Pour in the egg mixture as evenly as possible.
  5. Bake at 375ºF, 25-30 minutes.
  6. Let stand 5 minutes before adding the topping.
  7. For the topping, brown the hamburger; drain fat.
  8. Stir in the seasoning, tomato sauce and chiles.
  9. Spread over the crust.
  10. Top with cheese.
  1. Reduce oven to 350ºF and bake another 20 minutes or so until hot and bubbly.
  2. Serve with the toppings of your choice (add additional carbs)
  • Taco Pie ( (This is the NON low carb version if you are interested)

About This Recipe

“I got this from a friend when I started on the South Beach Diet, and this has helped satisfy my cravings for mexican food.”


    • 1/3 cup cheddar cheese
    • parchment paper


  1. Place 1/3 cup of cheese in thin layer on parchment paper.
  2. Microwave on high for one minute, or until cheese is bubbly.
  3. While the cheese is still flexible with parchment paper still attached, bend the cheese over a round object to give it a taco shell shape.
  4. The smaller in diameter the object is, the closer to a normal taco shell shape you will have.
  5. Let the cheese cool while around the object.
  6. When it has cooled, peel it from the parchment paper.
  7. Use this to make tacos, with normal fillings such as taco seasoned meat, lettuce, tomatoes, cheese, and sour cream, or you can also make smaller version of these shells to serve as low carb chips.
