The Verdict on the Recipe…AND My Thoughts on Low Carbing (with pictures)

I did taste the Enchiladas last night. It is a bit too rich for my taste so I may substitute or add the Mild Green Chili Enchilada sauce to the white sauce in the future. It is VERY filling. Next time I will see if they have 6 inch low carb tortillas instead of the 10 inch ones. I was unable to finish half of one.  I used Heavy Cream because it is Atkins approved…but hindsight is something. If you use half and half the sauce will not be so rich. 🙂 I have a ton of leftovers so I will be freezing them to see what happens.
I look at low carbing like this (I have been doing this since 2006 or 2007) you will have  to find what works for YOU personally. There are so many diets out there so I would suggest trial and error. What works for some will not work for others. We are all unique so any diet that claims to be the miracle end all be all diet is incorrect. This is a lifestyle change…so find a way to make it work for you. If you don’t then your results will not last.
Before I decided to do Robin’s version of Atkins (I guess that would be called Robkins) I was unhealthy and extremely overweight. This is what I looked like then:

I was only 35 years old. I thought I looked 'skinny' with the black. ***Just look at me NOT at the person that is with me. He was part of the reason I was binge eating.


Once again thought I was okay looking...much younger and very unhealthy. The kids in background are now 21 and 22...time flies.


I always thought wearing bigger clothes made me look slimmer. I HATED the camera so it was rare to catch me in any picture.


 

 That up there was a younger me. A me before I decided to leave all the low fat things alone and just listen to my body. Low fat doesn’t work for me so as a last ditch effort (and a way to distract myself from a failing marriage) I started Atkins. This is what Atkins (Robkins…I ate tons of vegetables and berries as well) did for me in 9 months:

Size 4. Eating low carb and exercising 6 days a week. I was never hungry


  Those pictures were taken in 2007. I have pretty much maintained my look except for about 10-15 pounds. The exercise does make a difference with the results. I cannot stress this enough. And finally here I am PRESENT DAY…I still look younger than I did when I was 35!

There is a reason that I am posting all these pictures. NO…it is not because I am vain it is because I really believe his Way Of Eating works.  It is like a fountain of youth for me. It really isn’t hard to do this lifestyle but it does take committment.
:)…NOW I will see if I can a recipe together and post it. I don’t like posting a creation unless I am sure it is perfect.  I also need to figure out the exercise routine again…
I’ll be back later…I’m enjoying the company. If you got to the end of this picture heavy post…I really appreciate you. Just keeps me motivated to continue on…and it keeps me on track.
My stories azre sometimes way out there but I do that to show that I do have a life that is continuing on along with the exercise and eating. IF my pictures can inspire just one person to at least clear their minds of what they have been told about healthy eating…and try a different approach…I would be happy!
